The interview

Mr. Marusic how you became a bartender?
After the Secondary school I started to work as a waiter in the restaurant of a big hotel, the "Jadran", in Tucepi near Makarska, one of the best hotels in Croatia. That job was very boring for me. It was always the same and I couldn't do anything creative. Then I saw at the bar how bartenders made cocktails - every day something new, always fun with the guests - and I realized: that's the job for me! I went to the school for bartenders in Opatija - where I found a very good teacher, Jan Urban. After that school I am in love with cocktails.

Where did you get the inspiration for the winning cocktail at the 7th International Bartender Competition?
I found the inspiration here in Dalmatia, in the sea, sun and stone, in Dalmatian music.
I live in a very small village: Brist, on the Makarska riviera, on the coast. My house is right on the beach. That house is a cultural heritage because of its beauty and because in that house lived one of the most famous Croatian poets, writer and monk Andrija Kacic Miošic - known also as "the old man Milovan". He was a relative of mine, I live in his villa, I hold his name, and thanks to him I have also a thread of art. I wanted to be a musician. I was a singer in Dalmatian singing group "Kacic". We also recorded a CD: I collect much of my inspiration from music.
From my big terrace I have a beautiful view on the sea and the islands, and I can't imagine I could wake up without stepping on that terrace to see the beautiful sea-side, to feel the beauty of nature.
In the summertime, in that house, I organize a cultural performance called "Kacicevi glasi", which involves the best singers, opera, theatre-players, painters from Croatia and from other countries.
All my inspiration comes from that village named Brist, from my beautiful terrace right on the beach… that's why I've never wanted to leave this small village even if I had many chances.

Which are the most significant steps in your career ?
A very important step in my career was when I decided to join a bartender competition. On that competition I met many bartenders from all over the world, I always learned something new, and after the competition I was better in preparing cocktails.
The competitions I attended were very successful for me, because I won many times both national and international bartenders' contests. Then I decided that I had to move to a World Bartender competition to compete with the bartenders from all over the World. I am a member of Croatian bartender organization from the begining in 1998, and also president of the Croatian bartender organization for the region of Split.

Did you work in bars or clubs that were somehow important for your future career ?
I worked for 20 years in the bar of the Hoteli "Tucepi", and I also have my own bar in my house in Brist named "Kacicevi dvori" which is open only in the summertime. I use that place to practice and enjoy - and that's the place where I have an exhibition of all the prizes I won - a sort of "memorial gallery". Many guests from all over the world enjoyed good cocktails in that bar: I served MIRACUL, and also lots of MIRACLE OF MATTONI. That cocktail was very popular in my cocktail bar this summer.
Beside this, I worked in many other places in Croatia, for some special happenings. I also worked with Croatian Ministry of tourism - on tourist fairs in other countries - and as a teacher for young bartenders in the school of Makarska. Some of my students also won gold medals in the competition for young bartenders' schools from all over Croatia.

Which is the most important ingredient for a good cocktail, if any?
The important is that all ingredients go together, taste good together but when you drink the cocktail you don't recognize all the ingredients. I mean that none of the ingredients dominates, but the final taste is very good .

Could you define your style as a barman?
My style is that guests must enjoy cocktails, they must enjoy when they look how the barman mixes the cocktail, they must enjoy my smile, my talk, they have to be served very quickly and be surprised when the cocktail arrives on the table. Surprised with the beauty of colours and special decorations. That must be something to adore.
I also enjoy very much when I prepare cocktails and I believe that a guest recognizes that.

How do you create your new cocktails?
I make new cocktails very easily. I just have to know which taste guest likes - and my new cocktail is prepared in few seconds. I have immediately all ingredients in my mind. But when I go on a bartender competition I must think about other bartenders, what they will do.
First I'm thinking about what could be good, what people want to drink nowadays and what will be special to surprise them. Then I try to find something what I haven't seen before… In that period of time I walk a lot on the beach - and I always look for inspiration in the beauty of nature and life.
I feel myself like I make cocktails for one beautiful song as it was my MIRACLE, and I usually play piano in that time until my cocktail comes to my mind. After that, I just take the bottles and try to find the best measure - for the best taste and colour.
